Churros

Churros, the classic Spanish street food that has taken the world by storm, are impossible to resist with their crunchy golden exterior and soft, airy inside. Ingredients:

  • 1 cup water
  • 2 tablespoons white sugar
  • 1/2 teaspoon salt
  • 2 tablespoons vegetable oil
  • 1 cup all-purpose flour
  • Oil for frying
  • 1/2 cup white sugar, or to taste
  • 1 teaspoon ground cinnamon

Instructions:

  1. Heat water, 2 tablespoons sugar, salt, and 2 tablespoons oil in a small saucepan until boiling.
  2. Add flour all at once, stirring vigorously until mixture forms a ball.
  3. Heat oil for frying in a deep fryer or deep pan to 375°F (190°C).
  4. Pipe strips of dough into the hot oil using a pastry bag.
  5. Fry until golden; drain on paper towels.
  6. Combine 1/2 cup sugar and cinnamon. Roll drained churros in the mixture.

Churros are thought to have been introduced to Europe by the Portuguese, who encountered a similar food in China. They adapted the technique and introduced the distinctive star-shaped cross-section we see today.
