Shkembe Chorba Recipe:

Ingredients:

  • 1 pound beef tripe, cleaned and cut into bite-size pieces
  • 6 cups water
  • 4 cloves garlic, minced
  • 1 tablespoon vegetable oil
  • 1 tablespoon paprika
  • 1 tablespoon flour
  • Salt to taste
  • Red wine vinegar
  • Ground hot chili pepper
  • Fresh milk (optional)
  • Fresh parsley, chopped

Instructions:

  1. Boil the tripe in water until tender, which can take up to 2 hours.
  2. In a separate pan, make a roux by frying the flour and paprika in oil, then add it to the boiled tripe.
  3. Add garlic and season the soup with salt.
  4. Serve hot with minced garlic, red wine vinegar, ground hot chili pepper, and a bit of milk to taste.
  5. Garnish with fresh parsley.
