Ingredients:
- 1 1/2 cups Arborio rice
- 1 small onion, finely chopped
- 2 tablespoons unsalted butter
- 1/2 cup dry white wine
- 4 to 5 cups warm chicken or vegetable broth
- 1/2 cup freshly grated Parmesan cheese
- Salt and pepper to taste
- Fresh herbs for garnish
Instructions:
- In a large pan over medium heat, melt 1 tablespoon of butter. Add the onion and cook until translucent.
- Stir in the Arborio rice, toasting for a minute without letting it brown.
- Pour in the wine and stir until it has mostly evaporated.
- Add the broth, one ladle at a time, stirring constantly and allowing each ladle to be absorbed before adding the next.
- Continue adding broth and stirring until the rice is al dente and the mixture is creamy, about 18-20 minutes.
- Remove from heat, stir in the remaining butter and grated Parmesan. Season with salt and pepper.
- Serve hot, garnished with fresh herbs.
