Ingredients:
- 2 racks pork ribs (about 4 lbs)
- 2 tbsp smoked paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp ground cumin
- 2 tsp kosher salt
- 2 tsp cracked black pepper
- Wood chips for smoking
Homemade Barbecue Sauce:
- 1 cup ketchup
- 1/2 cup apple cider vinegar
- 1/2 cup brown sugar
- 1 tbsp Worcestershire sauce
- 1 tbsp lemon juice
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- Salt and pepper to taste
Instructions:
- Mix paprika, garlic, onion, cumin, salt, and pepper.
- Rub the spice mix on the ribs.
- Soak wood chips in water for 30 minutes; drain.
- Preheat smoker to 225°F (107°C).
- Smoke ribs with wood chips for 3 hours.
- Wrap ribs in foil; smoke for 2 more hours.
- Unwrap and smoke for 1 final hour.
- For the sauce, combine all ingredients in a saucepan.
- Simmer sauce for 20 minutes; stir occasionally.
- Glaze ribs with sauce during the last hour of smoking.
These smoked ribs will fall off the bone, infused with a perfect balance of smoky and sweet flavors.
Tips for the Perfect Ribs:
- Keep it Moist: Spray ribs with apple juice every hour to keep them moist.
- Remove the Membrane: Peel off the membrane on the rack’s underside for better flavor absorption.
