  • 2 ounces unsalted butter, melted
  • Vegetable oil, for pan
  • 10 cups water
  • 2/3 cup baking soda
  • 1 large egg yolk beaten with 1 tablespoon water
  • Coarse salt, for sprinkling

Instructions:

  1. Combine water, sugar, salt, and yeast in a bowl.
  2. Add flour and butter; knead into a dough.
  3. Let dough rise for about 1 hour.
  4. Preheat oven to 450°F (232°C); oil a baking sheet.
  5. Boil water and baking soda.
  6. Shape dough into pretzels; boil each for 30 seconds.
  7. Place on baking sheet; brush with egg yolk and sprinkle with salt.
  8. Bake until dark golden brown, about 14 minutes.
